I love hot wings, spicy hot wings. I didn't realise that to be called Buffalo Wings, the American cuisine expects a wing section, rather than the whole wing. These spicy chicken wings can be done with either Tandoori or Chicken Tikka.
I went with the chicken tikka option this time around. I had time, so left them marinating yesterday, and overnight. Seasoned with salt and pepper, I poured the juice of half a lemon, some olive oil, and a finely cut garlic clove into the mix. Last but not least was the chicken Tikka and I was generous with the coating, as you want to see the chicken look red. Left in the fridge overnight, the flavours were always going to be ever present.
Today I transfered the chicken into foil, and on the baking tray left it in the oven at 180 degrees (C), for 45 minutes. It was wrapped the whole time. Thereafter, I opened the foil, and put the oven on grill to brown the chicken wings for about 5 minutes.
I had one as a snack, but this will serve as dinner tonight. I do think going forward, I will start cutting the wing into the respective sections, and we can then call them Buffalo Wings.
