Banting Breakfast Fit For A King

Banting sounds like such a militant word. Then again, saying low carb high fat is a mouthful, making writing LCHF very convenient. I always get a surprised reaction from people in the office when I bring in a "lunch box". The surprise is because they know that I commute, and my family is not with me during the week. So the way I understand their rationale is that it is a sexist assumption that men can neither cook for themselves,  nor pack their own lunch.

The simple reality for me is I enjoy cooking. I enjoy eating good quality food, and I enjoy eating real food. Add that I am on this low carb high fat eating plan, it makes my options very limited in terms of eating out, particularly when the options are going to be fast food ala McDonald's or the canteen at work. To be fair to me, I have eaten my roast chicken and salad quota for the year at the canteen.

So cooking supper after a long day at the office, always takes into consideration what I will eat the next day for lunch at work,  or breakfast before going into the office.

Last night was a real beef burger (without the buns). Grass fed beef tastes very different from grain fed beef. I threw in some mushrooms, cherry tomatoes, thick sliced onions and chopped celery leaves in the oven seasoned with basil, salt and pepper and a dollop of olive oil.

This morning I simply fried my sunny side up eggs, and sliced half an avocado. Like I said, a banting breakfast fit for a king. Thanks to Prof Tim Noakes, Sally-Ann Creed, Jonno Proudfoot and David Grier on their enlightening work in The Real Meal Revolution.
